This is a biennial herb that grows to 2m. It has broad leaves and interesting purple flowers. It is commonly used in Japanese cuisine and its roots are used, fresh and peeled, pickled, cooked like parsnip or used for its medicinal properties treating everything from acne to healing wounds. Young leaves can be used like spinach and both roots and leaves are excellent in stir frys.
Ensure ground is well dug before sowing to ensure long straight roots. Sow direct where it is to grow.
Sow in Spring or Autumn
Sow 7-12mm, seedlings emerge 7-30 days
Harvest roots 3-5 months.
